We have some great sweet and savoury healthy meal ideas this week for pumpkin.  Use this versatile vegetable in soup, stew, popsicles and cheesecake bites.  And if pumpkin is not your thing, try our maple glazed pork chops or broccoli pasta instead.

After a week of stuffing ourselves on holiday, we really need to reset our systems with a week of healthy meal ideas.  I still can’t look at burgers, steak sandwiches or pizza but am happy with a simple piece of roast chicken or pan fried fish.  Which is good as these meals are also super easy to pull together and don’t require a lot of thought.  Perfect for the first week of the new school term whilst we are all still trying to get back into routine.  

This week’s autumn menu plan is all about pumpkin.  Pumpkin soup, pumpkin stew, pumpkin popsicles and pumpkin cheesecake bites.  All perfect for enjoying this extremely versatile vegetable.  And if you are not a pumpkin fan, try our maple glazed pork chops or broccoli pasta instead.  Enjoy!

Spring Meal Plan

Sunday: Kohl Rabi Fritters with Garlic Cashew Cream Sauce, served with green salad.

Monday: Baked Italian Meatballs, tossed through spaghetti.

Tuesday: Easy Weeknight Roast Chicken, served with Mini Rosemary Roasted Potatoes and roasted asparagus.  

Wednesday: Pan-fried fish, served with Crispy Sweet Potato Chips and Creamy Silverbeet Gratin.

Thursday: Thai Pork & Peanut Curry, served with steamed jasmine rice.
