Our Real Food Meal Plan – Week 19

Real Food Meal Plan Week 19. Indian-spiced scrambled eggs, chunky fish cakes, chicken & sweetcorn chowder, and slow cooker Thai Beef Curry.

Is it really winter?  Most of this week the temperatures have hovered in the mid twenties, with no rain in sight.  Thankfully the nights are cool, so I can still cook what I like.

This week we have eaten:

Sunday

Parsee Scrambled Eggs from Nigel Slater’s Real Fast Food.  Served with Indian flatbreads.

Eggs scrambled with a onions, tomato, coriander and some spices.  A great Sunday night dinner.  I found the flatbreads (made only from flour, water, butter and salt) in the freezer section of my local Indian wholesaler.  They were perfect with the scrambled eggs.

Monday

Kinda Spaghetti Bolognaise from Jamie Oliver’s Happy Days with the Naked Chef.

This is possibly my favourite bolognaise recipe.  It cooks slowly in the oven, requiring no further attention after the initial browning of the meat and vegetables.

Tuesday

Classic Chunky Fish Cakes with tartar sauce and wilted spinach.  Apple & Blackberry Crumble for dessert.

Wednesday

Chicken and Sweetcorn Chowder with Smoked Sausage from Nigel Slater’s Real Food.  Leftover Apple & Blackberry Crumble for dessert.

This chowder is so good, Mr Grumpy and I had an argument the next morning as to who was going to get to eat the leftovers. I won.

Thursday

Slow Cooker Thai Red Beef Curry, served with steamed jasmine rice.

Freezer Cooking

I made a large batch of the Chunky Fish Cakes on Tuesday night, and have frozen half of them for another meal.  These can be cooked from frozen, which will be a bonus as the school holidays approach and we spend a lot of time out of the house.

We are light on baked goods for school lunchboxes, so a quick batch of apple muffins went into the freezer as well.

Bon Appetit!
