Menu looks great! What kind of fish are you using? I was raised on fresh saltwater fish and 15 years later I am still adjusting to freshwater fish! LOL
Thanks Kim. I’m using local saltwater at the moment. Pink Snapper is in season here, and selling about $20 – $30/kilo cheaper than normal, so I am buying that for preference. It is a beautiful eating fish, but I will only buy it in season due to price. We get barely any freshwater fish here, but they taste so different don’t they ๐
