The weather at this time of year drives me mad. I plan a week of meals and suddenly the temperature shoots up, and my simple roast chicken doesn’t seem at all appropriate. I still managed to put something on the table though, so the family remain happy.
This week we have eaten:
Sunday
San Choy Bow.
I am still working on this recipe so hope to share it at some point. This dish has loads of vegetables so doesn’t t really need accompaniments. We did have ice cream for dessert though. (It was hot!)
Monday
Pan fried fish with Pea & Celery Wholegrain Couscous.
Pan fried fish is my quick meal. It takes minutes to cook. I season plain flour with sumac, salt and pepper, dip the fish into milk then into the seasoned flour. I then pan fry the fish in a mixture of ghee and olive oil.
Tuesday
Chicken Schnitzel with Sweet Potato Chips and a green salad.
Wednesday
Oven Roasted Ratatouille (coming soon) with BBQ sausages and crusty bread.
Thursday
Tuna and White Bean Salad with bread crackers.
We had a small portion of the bread leftover from Wednesday’s dinner. To stretch it further I sliced it thinly and made crackers to eat with the salad.
Freezer Cooking
I made a huge batch of chicken schnitzel on Tuesday night, cooked what I required for dinner, and froze the rest according to this post. I now have enough for three additional meals.
I also had great intentions of freezing the ratatouille, however Mr Grumpy had other ideas and took it for lunch. It is such an easy dish though that I may have to make another batch just for the freezer.
