This week’s Real Food Meal Plan is a nod to the wintery weather, and includes Swedish-style meatballs, lasagna, slow cooked vegetable soup, and green chicken curry.
Whilst it’s not quite winter (one more week), the winter weather has well and truly arrived. Lots of rain, which is unusual for Perth, and cold winds mean that heartier comfort food is becoming the order of the day.
This week we ate:
Sunday
Omelettes stuffed with Garlic Mushrooms.
I was going to make vegetarian nachos, but forgot to soak the beans, so eggs it was. I did whip up an apple pie for dessert so I was forgiven for the lack of nachos.
Monday
Swedish-style Sausage Meatballs, served with mashed potato and Fried Cabbage with Pancetta.
These meatballs rely on good butchers sausages, and together with a simple creamy sauce, make a really quick and tasty meal.
Tuesday
Lasagna, served with green salad.
I’ve outlined my method for making lasagna in my Simple Bolognaise Sauce post.
Wednesday
Slow Cooker Vegetable Soup.
I received a packet of this Superblend Fibre mix, which contains frekkeh, lentils and beans, in a recent GoodnessMe box so thought I would experiment. I was surprised at how tasty this soup was, so keep an eye out for it appearing on the blog quite soon.
Thursday
Green Chicken Curry with Jasmine rice.
Freezer Cooking
My plan to restock the freezer has begun. This week I made a huge batch of Bolognaise sauce, and a double batch of my bechamel sauce. I assembled two lasagnas, one of which we ate on Tuesday night, and the other went into the freezer. I had enough bolognaise sauce left over to freeze as a separate meal. This will be stirred through pasta or gnocchi for a quick dinner. I also had about a cup of bechamel leftover, which has gone into the freezer for adding to sides or as a filling for crepes.
Mr Grumpy and I shared most of the leftover soup for lunch, however I did manage to freeze a small amount. Served with a toasted cheese sandwich, it is good to know I have an easy lunch on hand. I need to make more soup.
Bon Appetit!
