Watermelon & Mint Aguas Frescas

This is a refreshing summery drink. It can be prepared a few hours before serving, but do not add the ice until the last minute. Substitute rock melon or honeydew melon for the watermelon for a different flavour direction.

  • 1 kg watermelon chopped, 2 1/4 pounds
  • 5 sprigs mint
  • 1 cup cold water
  • Juice of 1 lime
  • slices Ice lime and mint leaves to serve


  • Juice the watermelon and mint in a juicer.
  • Stir in the water and lime juice.
  • Cool until required.
  • Serve over ice with slices of lime.
  • Garnish with extra mint leaves.


If you do not own a juicer, blend all the ingredients together in a food processor or blender and strain.
You can add additional sugar or other sweetner to the mix if your fruit was not sweet enough to start with.
