Ingredients
113g (4 ozs)unsalted butter
113g (4 ozs)dark muscavado sugar
150g (1 cup)plain flour
90g (1/2 cup)chopped dates
45g (1/4 cup)chopped pecans
1eggbeaten
1 tspvanilla extract
pinch salt
Instructions
Pre-heat the oven to 175C (155C fan forced).
Grease and line a 17cm x 27cm slice tin, and set aside.
Place the butter and sugar into a medium saucepan.
Gently stir the saucepan contents over a low-medium heat until the butter melts, then increase the heat to medium and bring the mixture to a boil.
As soon as the mixture comes to a boil, remove the saucepan from the heat and allow it to cool slightly. I normally do this step, then chop my nuts and dates whilst the mixture cools a little
Add the remainder of the ingredients to the saucepan, and mix to combine. You should have a soft dough.
Press the dough into the lined tin with the back of a silicone spatula, and level out the top of the slice as best you can.
Bake for 20 minutes, until the slice is slightly risen and golden brown.
Allow to cool completely in the tin, then slice into 16 pieces with a sharp knife.
