This is a very flexible recipe, easy to scale up or down according to the number of tarts you wish to make. There are three of us, so I have provided the ingredients I use to make three tarts. Make as many as you like.
There are a number of different coconut spreads on the market, but you can also easily make your own using
coconut butter and coconut nectar or maple syrup. I use a ratio of 1 Tablespoon coconut butter to 1 teaspoon coconut nectar.
