This week’s meal plan is full of healthy meal ideas that won’t break the bank. Pozole and Shepherds Pie are both on the menu, together with slow cooker ramen, and slow cooker chicken tacos for those busy weeknights.
I’m on a bit of a noodle binge at the moment. Noodles are so quick and easy to prepare, can be eaten hot or cold, and there are so many different types it is difficult to get bored. They make a really quick stir fry dinner, and as everything is cooked in the one pan there is limited washing up afterwards. My advice, which I actually do follow, is to keep a few packets of noodles in the pantry for a speedy meal.

Wednesday: Quince-glazed Double Lamb Chops with Lupin & Vegetable Pilaf.
Thursday: Dan Dan Noodles
