I’m quite excited about this week’s meal plan. Here in the Southern Hemisphere the weather is starting to cool, and with the darker evenings I can start to cook my favourite comfort meals. Those of you in the North are beginning to enjoy longer days with an abundance of fresh produce, making it easier to whip up healthy dinners for the family.
Spring and autumn are my favourite times of the year; a time when I can pretty much cook whatever I want. This makes it so much easier to write a menu plan. So without further ado:
Spring Meal Plan
Sunday: Slow Cooker Pork Posole via The Gingered Whisk
Monday: Lemon Butter Salmon via Carrie’s Home Cooking
Tuesday: Slow Cooker Beef & Broccoli via Kleinworth & Co
Wednesday: 20 Minute Leftover Roasted Vegetable Frittata via me
Thursday: Stuffed Plantain Cups via Smart Little Cookie

Autumn Meal Plan
Sunday: Mushroom Pesto Pasta – (I just omitted the chicken from this recipe).
Monday: Jerk Chicken, served with Rice & Beans
Tuesday: Dinner out – Yay!!
Wednesday: Chorizo & Spinach Gnocchi – coming soon I promise
Thursday: Cauliflower and Spinach Macaroni Cheese – this one is also in development, and will hopefully appear soon too.
