My meal plan went out the window this week. I had it all written, and had done all the shopping, then realised I had read my calendar wrong and I that I had not one but two events right on dinnertime this week. This necessitated a quick menu rethink, taking into consideration what I had on hand and what meals would be OK to reheat. Time to drag out the gadgets.
Thank goodness for the slow cooker and a good chicken curry. And I would have been lost without my rice cooker and it’s automatic timer. I can’t rave about this machine enough.

Sunday: Mushroom & Green Bean Pesto Pasta. I used my chicken pesto pasta recipe, just replacing the chicken with green beans.
Monday: Gnocchi with Chorizo & Spinach.
Tuesday: Pan fried fish, served with steamed asparagus & Easy Baked Sweet Potato Chips.
Wednesday: Slow Cooker Vietnamese Beef Stew, served with steamed jasmine rice.
Thursday: The Spice Tailor Classic Butter Chicken, served with The Spice Tailor Black Makhni Daal, steamed basmati rice and naan bread.

Cooking rice is one thing that I’ve never managed to master. It was only after the purchase of a rice cooker that it started to appear on our plates with any degree of regularity. Thank god for technology, I say.
