We have a great week of healthy meals lined up for you, including an easy Chicken Enchilada soup, Italian vegetable casserole and slow cooker leg of lamb. Combine this with a protein-packed quinoa breakfast bowl and tropical sunshine smoothie, and you should be positively glowing with health by the end of the week.
The weather is all over the place at the moment. No sooner did I write my meal plan than the temperature spiked, meaning I had to rethink the entire week. That, and the oven died … yet again (!), so I had to scramble to find other dishes that could be made without said oven. This is why it pays to have a few healthy meals up your sleeve that you can rustle up without any notice. In summer for us it is a BBQ and salad; easy peasy!
