A great week of easy healthy meals, with sheet pan za-atar chicken, homemade french onion soup, a sweet potato tart and some simple slow cooker meals.
I’m a little over the weather. We have had the coolest summer in recent memory, which has been delightful. And just as autumn starts, with its supposedly shorter days and cooler weather, the temperature spikes and turns my meal planning on its head. I am more than ready for a proper autumn, thank you very much.
This week’s menu is a good example of how much easier dinner can be with a few staples on hand. Both the French Onion Soup and Sweet Potato & Feta Tart in this week’s menu rely on caramelised onions, which do take some time to prepare. However, if you happen to have a batch of my Caramelised Onions on hand then you are already half way to dinner; the soup can be ready in no time at all, and the tart is so much easier to pull together.

Wednesday: Leftover Salmon Caesar Salad
Thursday: Panang Beef Curry, served with steamed brown rice
