This week’s Real Food Meal Plan is all about hearty, warming meals. Think moussaka, everyday roast chicken, a simple pasta bake, lentil and brown rice soup , and a spinach and salmon fish pie.
I am loving the cooler weather. I can plan anything I want for dinner, knowing that the weather will be suitable. Cooler weather lends itself to slow cooked meals and soups, which are the mainstay of my winter weekday menus. Hearty bakes from the freezer, served with simple green salads or steamed vegetables also make for easy dinners. Still no freezer cooking this week. I am just concentrating on making some space before I start restocking the freezer.

Sunday
Mighty Greek Moussaka from Jamie’s Comfort Food. Served with green salad.
This one was straight from the freezer, and was even better the second time around.
Monday
Easy Weeknight Roast Chicken with Easy Baked Sweet Potato Chips and roasted cauliflower.
I always roast more pieces of chicken than we require for dinner, which gives us leftovers for lunch the next day.
Tuesday
Simple Pasta Bake.
This couldn’t be easier. Cook some pasta, stir through Slow Cooked Tomato Pasta Sauce and tip into a baking dish. Scatter over grated mozzarella and Parmesan, then bake at 180C for 30 minutes or until golden brown.
Wednesday
Lentil and Brown Rice Soup, served with a loaf of Five Minute Artisan Bread .
Thursday
Puffed Salmon & Spinach Fish Pie, served with steamed broccoli.
