Our menu plan this week includes some great healthy crock pot meals to help you cope with those busy days. Slow cooker chicken enchilada soup and BBQ beef brisket, quinoa burrito bowls, fish BBQ skewers and shrimp and lentil stew all feature on the menu.
We are moving into the busiest time of the year. I know for most families this period generally occurs around the end of the year as planning for the festive season starts. For us, the busy period is punctuated by winter sport. The Princess is involved in two winter sports, which means a lot of driving her to and from practice and to weekend games. A few years ago this would have caused me no end of stress. Now I just plan a few healthy crock pot meals during the week. We remain well-fed, and my sanity is preserved.
Autumn and spring are my favourite times of the year in the kitchen. With cooler evenings I can pretty much cook whatever I like, produce is abundant, and meal planning becomes much easier. So without further ado, my fellow bloggers and I bring you a great menu for the week ahead.

Autumn Meal Plan
Sunday: Dinner out for a family birthday so no cooking – Yay!!
Monday: Gnocchi with Mushrooms & Blue Cheese
Tuesday: Tray Baked Sausages with Potatoes and Peppers
Wednesday: Chicken Schnitzel, served with Easy Baked Sweet Potato Chips and steamed corn on the cob.
Thursday: Beef Rendang with Turmeric Rice
