Need help with this week’s healthy meal plan?  Don’t worry, we have you covered with two speedy pasta dishes, celery root and white bean soup, southern fried chicken and some easy 20-minute quesadillas.  Then fill up the lunchbox with some savoury salami, spinach and cheese scrolls, and easy oatmeal bars.  And if you just don’t know where to start with meal planning, then why not join my two week Dinner at Home Challenge, starting on 30th January.

Wednesday:  20 Minute Black Beans, Beef and Avocado Quesadillas via Smart Little Cookie

Wednesday:  Crispy Chicken with Coleslaw

Thursday:  Braised Mince Pork from Adam Liaw’s Asian Cookery School, served with steamed rice.
