The end of the school term is in sight. And for me it cannot come soon enough.  The second term of the school year is always the busiest for us, and the whole family arrives at the end of the term absolutely shattered and ready for a break. Only one week to go! Thankfully the cooler weather means I can fill the menu with soups and slow cooker meals; those easy dinner recipes that are nourishing but take little effort to pull together.

If the weather is hot in your little corner of the world, we have a great summer menu this week.  It is crammed with variety, yet full of dishes that will be loved by the whole family.  And we also have some simple sides that will accompany almost everything, and that take great advantage of the available summer produce.  Enjoy!

Wednesday:  Peppered Pork Pot from Ultimate Slow Cooker, served with Instant Polenta

Thursday:  Speedy Minestrone Soup, served with crusty bread
