Healthy Weekly Meal Plan - Week 28. Whip up a week of quick family meals with a chicken burrito bowl, cherry tomato pasta or pesto zucchini noodles. Add a tropical sweet potato on the side.

Whip up a week of quick family meals with our simple chicken burrito bowl, an easy cherry tomato pasta and some delicious pesto zucchini noodles.  Pair a simple piece of fish with our yummy tropical sweet potato boats, and finish off with our tropical Paradise cookies.

The school holidays are coming to an end, so I am enjoying the last few lazy days and sleep ins before the madness begins again.  This week has been all about quick family meals that don’t require a lot of preparation, and I have been leaning heavily on the oven to do all the hard work.  Toss in The Princess’s favourite Lemon Tuna Pasta, together with a few simple soups, and dinner prep has been relatively easy.  Now if only I could get on top of the back-to-school baking.  

Our summer menu makes good use of the slow cooker, with a delicious pineapple peanut chicken and simple chicken burrito bowls.  We also have an easy cherry tomato pasta to use up your garden surplus, a smoked salmon salad for a quick lunch and delicious Paradise cookies for a little sweet treat.  Enjoy!

Monday:  Easy 30 Minute Lemon Tuna Pasta.

Tuesday:  Pork with Apples & Maple Syrup from Eat: The Little Book of Fast Food by Nigel Slater, served with mashed potato and steamed broccoli.

Wednesday:  All-in-one Chicken Traybake.

Thursday:  Hearty Winter Vegetable Soup, served with crusty bread.
