Whether it is summer or winter in your part of the world, I have you covered for a week of healthy eating. On the winter plan this week are comforting soups, a chicken take-out fake-out, and a great sheet pan dinner. On the summer plan is BBQ pork with summer vegetables, fish tagine and a lemony tuna pasta dish.
We are having the weirdest summer. Not that I am complaining mind you, but February is usually the hottest month of the year. So far it has been cool and wet, which I am loving as I can turn on the new oven. The oven was well and truly christened this week with my Easy Weeknight Roast Chicken. I’ve also been roasting quite a lot of summer fruits for dessert. That is the joy of healthy eating; you get to eat dessert without guilt 😀

Tuesday: Easy Weeknight Roast Chicken, served with Mini Rosemary Roasted Potatoes and steamed corn on the cob.
Wednesday: Beet Top & Ricotta Tart, served with green salad.
Thursday: Lemon Tuna Pasta
