Real Food Meal Plan – Week 9 2016

This week’s Real Food Meal Plan includes a freezer friendly Shakshuka, pea & ham soup, easy swedish-style meatballs and chicken schnitzel.

The Princess was still on camp for most of this week, which made it a little easier to write this week’s meal plan.  I even worked in a few meals for the freezer.

This week we ate:

Sunday

Shakshuka with homemade sourdough bread

I always double this recipe, as it freezes well.  This is one of the few recipes I never tinker with; it is great as it is.

Monday

Smoky & Flavoursome Pea & Ham Soup

It has become a tradition for me to make this soup with the leftover Christmas ham bone, and then store the soup in the freezer until the weather cools.  This week we started in on the freezer stash.

Tuesday

Swedish-style meatballs, served with mashed potato and green salad.

Wednesday

Spelt Spaghetti, Vine Tomatoes & Baked Ricotta from Everyday Super Food.

Thursday

Chicken Schnitzel, served with Easy Baked Sweet Potato Chips and green salad.

The Princess’s favourite meal, and a welcome change from camp food apparently.

Freezer Cooking

I made a double batch of Shakshuka on Sunday night, and took out half of the sauce before I added the feta. I freeze the sauce in zip lock bags. To serve, I reheat the defrosted sauce, then stir in the feta and add the eggs.  A simple and tasty dinner.

I also made a huge batch of chicken schnitzel on Thursday night and froze it using these instructions.  As I can cook the schnitzel from frozen, this is a handy meal to keep on hand.
