With just Mr Grumpy and I at home this week, I have had to come up with easy and healthy dinner ideas for two of us instead of the normal three. On the spring menu, we have oven fried chicken, flank steak pinwheels, sausage puff pastry pockets and a great vegetable-packed bolognaise sauce.
The Princess is away at the moment, and I have seriously lost my cooking mojo. I put it down to the fact that it is school holidays here, and I am in holiday mode. At least I hope that is it. Ask me again at the end of next week when school is back.
In the meantime, I have been trying to come up with easy but healthy dinner ideas for two, with varied success. Mr Grumpy refused to eat the noodle dish (I didn’t think it was that bad) so found himself something else for dinner. There were no complaints the rest of the week though, so I must have somewhat succeeded.

Sunday: Pasta with Dill & Bacon
Monday: One Pot Chicken Chow Mein (minus the chicken – I went long on vegetables)
Tuesday: Easy Weeknight Roast Chicken, served with Mini Rosemary Roasted Potatoes & roasted Brussels sprouts.
Wednesday: Dukkah-Crusted Baked Salmon Fillets, served with Dauphinoise potatoes and boiled peas.
Thursday: Ravioli tossed with creme fraiche, crispy pancetta and spinach. (totally made this one up – but Mr Grumpy liked it anyway. Win!)
